Adicionar o queijo da ilha, o pão moído, a salsa e o ovo. Fazer almôndegas e fritá-las um pouco em 1 colher de azeite. Servir com salada. Apesar de ser um prato frito não deixa de ser light pois apenas o frango é na realidade grelhado. Deixe a marinar meia hora, entretanto moa à parte os cornflakes e misture-os com a paprika e o queijo ralado. Num outro recipiente, misture as claras e o leite magro. Passe os bifes no leite com claras e depois no cereal. Coloque numa assadeira untada com meia colher de azeite e leve ao forno médio, até que fiquem dourados (cerca de meia hora). Vire logo que a parte superior fique dourada para que a parte inferior também fique. Frite os bifes na frigideira antiaderente pondo apenas meia colher de azeite e deitando um pouco de água sempre que necessário para que não peguem. Vire-os até que fiquem dourados. Retire-os e coloque o pimentão e o tomate na frigideira e cozinhe até que o tomate se desmanche e engrosse.
